Thai-Style Veggie Burger With Spicy Mayonnaise Slaw

Ingredients
- 1, 15 oz can white beans or chickpeas
- 1 cup shelled edamame
- 1 cup cooked Neilly’s Thai Jasmine Rice Mix
- ½ red bell pepper, finely diced
- ¼ cup chopped green onion
- 1 jalapeno, minced
- 1 tbsp sweet chili sauce
- 1 tsp salt
- 1 egg, beaten
- ¾ cup breadcrumbs
- 1 tbsp avocado oil, to fry
- Brioche buns, to serve
- 3 cups shredded purple cabbage
- 2 cups shredded carrots
- ¼ cup cilantro
- ¼ cup chopped green onion
- ⅓ cup Neilly’s Spicy Mayonnaise
- 1 tbsp lime juice
- 1 tsp soy sauce
- 1 tsp honey
- 1 tsp sesame oil
- 1” knob ginger, grated
Spicy Mayonnaise Slaw
Directions
To a large bowl, add the beans, edamame, cooked rice, bell pepper, green onion, jalapeno, sweet chili sauce, and salt. Mix to combine, mashing the beans lightly. Add the breadcrumbs and egg, mixing to combine.
- Form the mixture into about 8 medium patties.
- Heat a large skillet over medium heat and add the avocado oil. When the oil is hot, place a couple of patties in the skillet. Cook until golden brown on the underside, about 3-4 minutes, then flip and cook another 3-4 until crispy and golden on both sides. Repeat with the remaining patties.
- In a large bowl, whisk together the spicy mayonnaise, lime juice, soy sauce, honey, sesame oil, and ginger. Add the cabbage, carrots, cilantro, and green onion. Toss to combine and coat the slaw with the mayonnaise mixture.
- Assemble the burgers on desired buns with the slaw on top.
