2 tbsp unsalted butter
½ medium white onion, diced
½ cup diced carrots
1 tsp minced garlic
1 cup green peas
2 ¼ cup vegetable broth
Heat a medium saucepan over a medium heat. Add the butter to the saucepan.
When the butter melts, add the diced onion and carrot. Saute, stirring occasionally, until the onion is mostly tender, about 5 minutes.
Stir in the minced garlic. Saute another 2 minutes, stirring often.
Stir in the yellow rice mix. Toast the rice, stirring often, for 3-4 minutes or until the rice is beginning to brown lightly.
Stir in the green peas and vegetable broth and cover the pot with a lid. Reduce heat to low and simmer for about 20 minutes, or until most of the liquid is absorbed.
Remove from the heat and let sit for 5 minutes. Fluff with a fork and enjoy!
