Coconut Meatballs with Coconut Rice
Preheat the oven to 400 degrees Fahrenheit and line a large baking sheet with parchment paper.
Meanwhile, in a large bowl, combine the ground beef, breadcrumbs, green onion, cilantro, egg, garlic, onion powder, salt, ground ginger, and lime juice. Gently mix until just combined. Do not over mix.
Scoop a heaping tablespoon of the meat mixture and roll into a ball. Place on the lined baking sheet. Repeat until all meatballs are formed.
Bake for about 15-20 minutes or until cooked through.
Heat a large skillet over medium heat and add the coconut sauce.
Once simmering, add the cooked meatballs and cook until completely coated.
Serve on top of Neilly's Coconut Rice and garnish with more green onion and cilantro if desired.
