Ingredients
2 Large Sweet Potatoes
1 Large Onion ( 1 inch diced)
1 Large Tomato ( 1 inch diced)
1 Large Red Bell Pepper (1 inch diced)
1 Large Green Bell Pepper ( 1 inch diced)
1 Tbsp Minced Garlic
2 Tbsp Balsamic Vinegar
2 Tbsp Olive Oil
1/2 tsp Salt
1/2 tsp Black Pepper
Directions
Preheat Oven 400 degrees
Peel sweet potato and dice 1 inch chunks (preferred size can be 1/2)
Wash and drain all the water out. Pat with paper towel to remove excess water
Mix sweet potato , salt, black pepper, and olive oil in a bowl
Add all remaining ingredients and mix until evenly distributed
Spread sweet potatoes on a baking sheet
Roast in oven for 25 minutes or until nice and brown (oven times may vary)

Add some fresh parsley to the finished product to spruce it up!
