Ingredients: 3 lbs. potatoes; 1/4 medium onion (1 inch diced); 1 Tbsp minced garlic; 1/2 stick of butter; 2 Tbsp Olive Oil; 1/2 tsp salt; 1/2 tsp black pepper; 2 tbsp fresh parsley

Ingredients

3 lbs. potatoes
1/4 medium onion (1 inch diced)
1 Tbsp minced garlic
1/2 stick of butter
2 Tbsp Olive Oil
1/2 tsp salt
1/2 tsp black pepper
2 tbsp fresh parsley

Directions

Preheat Oven 400 degrees
Dice potato 1 inch chunks (or 1/2 if preferred)
Wash potato and drain the water out
In a pot mix potato, salt, black pepper, garlic, onion and butter (Do not add water)
On medium-low heat blanches for 5 minutes (Do not fully cook)
Remove from stove and spread potatoes on a baking sheet
Roast in oven for 20 minutes or until nice and brown (ovens may vary)
